    Dos Chickens

    Just finished smoking 2 - 5lb roasters. My wife is fixing the sides right now. Rubbed them with a mixture of Rosemary, Thyme, Sage, Orange Peel, Black Pepper, and Garlic Powder. Lit the coals like I always do: 12 minutes in the chimney and then into the pan and into the PBC. Hung the chickens and they were done in 1:50, with an internal temp of 165 deg. Hope they taste as good as they look...

          They tasted great... Ate 1 chicken, pulled the other for either soup or curry (haven’t decided yet).

              Very nice! Have you tried halving the birds too? I always do that and find it easier post-cook. Curious as to your experience.

                No I’ve never halved or spatchcocked chickens or turkeys. I’ve always hung them on the hangars - legs
                pointing up. Hasn’t failed me yet...
