- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
The last time I spatchcocked turkeys, I thought about doing that. Wasn't to hang, but was on my offset. I no longer spatchcock chickens, but cut them in half with my poultry sheers. Now you have me thinking about doing that with the turkeys next week... makes things a lot easier to arrange on the smoker.
