    Spatchcocked turkey - hanging vs. grate

    Lots of great reading about turkey techniques the last few days, and I'm seeing that people pretty much always hang their bird. I'm wondering if you all find that better than laying the (spatchcocked) turkey on the grate.

    I have visions of dropping the whole bird into the coals (did that once), but the grate would give me a safety net. Also, with no rebars in, I'm thinking that I can get the temp up to a more poultry-friendly range? I'd be able to squeeze a few armadillo eggs on the grate at the same time, too.

    But the hanging bird seems like everyone's way-to-go. Thoughts?

    Hanging is nearly always going to be the best way in the PBC. Just make sure you get the hooks securely under the bones. I bought my PBC 2nd hand, and it came with a bunch of accessories, including the hinged grate. That might be the ideal solution in your case.

      I always hang mine.If you are worried about it falling into the coals, you should use four hooks, arranged in a daisy chain to make sure they do not fall. Then there should be no worry at all.....

        Make sure you get the hooks under a bone. I did buy the hanger which can fit on a single rebar. This way you can leave one out.

          My spatchcocked PBC turkeys tell me they prefer to be hung , feet first with little oiled foil booties. By the time the breast reaches temp, the leg and thigh temps are also pretty doggone perfect.

          But hey, the nice thing about the PBC is that it lets you do it either way. So if you feel better using the grate, then go for it. Either way the bird will be delicious.

            The vertical position with legs down is a clear winner... it's why I stand my turkey up like a sassy boss.
