Looking at the new Clint Cantwell Turkey recipe, and really wanting to try it. However, I've never applied butter under the skin of the birds I've cooked in the past...which now has me wondering...would this work on a PBC? Thoughts?

I haven't seen that recipe, but butter contains ~ 15% water, so If I was gonna do this, I'd use ghee because the water has been removed, (as well as the milk solids). Water is the enemy of crisp skin.
