    My PBC Fling - A Story of MCS(?)

    Last Christmas Santa was awesome enough to bring me a PBC. I haven’t been at this outdoor cooking thing nearly as long as many of you. Started on my 22” kettle using a snake, joined AR a couple years ago, graduated to my 26” with SNS, and the PBC opened up new learnings and experiences for me (and the best damn poultry on the planet).

    Fast forward 10 months... I’ve used that cooker on average more than once a week, sometimes 3-4 times in the same week. The sticky articles on the PBC sub forum (nod to fzxdoc ) and something ColonialDawg said (~don’t try to manage the temps, you’ll go crazy, let it roll) were invaluable. That PBC smoke fog is a beautiful thing!

    All that said, there are some things I’ve experienced that have left me wanting more... (opinions expressed here are just that, nothing more. I realize there are ways/mods to address most of them and they may not be issues for everyone... I look at this like I’m lucky enough to have enough experience to form an opinion!)
    • Running probes thru the rebar hole is a pain. Sure, I figured out the best method that worked for me, but it is what it is - less than ideal.
    • Temp mgt... I still am of the mindset that, generally speaking, it’s best to just let it do it’s thing. I even reached a point where I was so confident in the behavior I’d forgo an ambient thermometer. But if I’m doing poultry, I want higher temps - gotta take action. Lid cracking, 3/8” rebar, one rebar run diagonally... etc.
    • Temp mgt... It makes good ribs, but they taste more grilled than smoked to me and are slightly tougher. I’d like lower temps. Smoking salmon? Need lower temps... aluminum foil over a couple rebar holes helps. And trying to get that ambient probe hung in the right spot and not in a meat shadow, well... not the end of the world but it’d be cool if it was easier, like with a well placed probe port. Meh.
    • Hot spots! If you’re using the grate, I learned you better rotate it during the cook. No matter how evenly I spread out the lit coals when lighting it, there are always hot spots in the charcoal basket. And they move... the hot spots that is. It might be in one spot the first hour, and somewhere else later. Wanna rotate that grate? While you got multiple probes in meat and one clipped to the grate? Mmm... suboptimal.
    • Big cooks... yes, it comes with 8 hooks. But in my experience overloading the PBC will lead to issues. I’ve done multiple butts at once, 2 just yesterday, and keeping temps up can be problematic. I did 3 butts once (yes, they’ll fit!) and actually had to add a full lit chimney after a few hours. Try 3 or more yardbirds at once... those juicy buggers will do their best to douse that charcoal basket. 🐓​​​​​​​​​​​​​​💦
    • Placement... I cook on my deck. It stays out there on 2 layers of pavers proudly displayed, and without wheels. Yep, I know some folks have purchased a dolly that fits. My wife sure as heck wishes it could be wheeled aside like the kettles. Happy wife, happy life. Just sayin’.

    Ok, I hope that all comes across as sharing experience, learning on my part, and not ignorant whining. I’ll repeat - I love my PBC! So much so that I’m hauling it to my parent’s house the Wednesday before Thanksgiving so I can cook the turkey on it. And then I’m leaving it there...😞 It’ll have a great home in a beautiful courtyard with a fountain. I’ll have visitation rights, and a GREAT tool for smoking meat for family when I’m there. So... I’m kind of looking at it like I’ll still have a PBC just at a remote location. And no, I just got something in my eye... that’s all... pardon me a sec 😂

    But lets be real - any void created by one less cooker must be filled! So Santa got an early start. I’ve been keeping an eye on these... Max has a very favorable review on the free site. Kevlar gasket, hmm I’ll run my probes under that. Air intake & exhaust for some temp control... wonder if it works? Ah, it actually CAN turn into a grill for a great sear, nice design! Oooh and a diffuser to rid it of hot spots, i like it. ”Rock me momma like a wagon wheel...” it’s mobile too 👍🏻. What’s that? $247 at Walmart, are you kidding? Now my biggest problem is... how do I wait til Christmas?? 🎅🏻

    Easy. Make today Christmas and act surprised when you unwrap it. You can pull it off. I have faith in you.

    And have fun with it! Let us know how you like it and how it compares to the PBC.

      Thanks, I was afraid you’d never "speak" to me again. 😂 I’m looking forward to trying the Bronco and comparing, will definitely post my thoughts! BTW, your meatloaf recipe is prepped, going on the PBC in a few hours...👍🏻

      It's always fun to try something new, FishTalesNC , especially when there's a good base for comparison. I almost envy you. But my PBC isn't going anywhere. It's scheduled for making your chicken lollipops recipe tomorrow evening. Looks like we were recipe swapping at almost the same time.

    Your prerogative to a pre christmas present practice run. Pretty much the same as a practice cook before the big event.

    Just smoke a chicken and get two of those paper thingies that cover the end of the drumstick - one green and one red. It's Christmas!!

    You took the words right out of my mouth @FishTalesNC by summing up all the PBC challenges. I too love my PBC and will never part with it but the Bronco is on my next cooker list because it seems it will take barrel cooks to the next level. Look forward to your comparisons so don't let us down.

    I solved all those issues as pictured below minus some high temp silicone plugs & metal washers.

    THEN I solved it again with a Kamado joe, your wife should really be grateful how reasonable and frugal you are.

    Congrats on the new cooker!! Those things look really sweet, looking forward to hearing your reports.

      I kinda did the same thing. I took mine down to my uncles farm for when I am there..........then I ended up buying one again for my house. LOL.

      Let us know what you think about the Bronco. I know Jerod Broussard had a good time testing that rig.

        "My uncle has a country place, that no one knows about..." I definitely will, just not sure when I'll be "allowed" to fire it up! Didn't know Jerod tested it, that is awesome. I've scoured YouTube for videos, saw an interesting one from the company re: lighting it. I'm expecting a little more of a learning curve, but hope to get it dialed in after a few cooks.

        Thanks Spinaker I read that but assumed Max wrote it since he did the video (sorry Jerod Broussard !) Funny thing is I was on the phone with a friend (MCS travels well over phone lines) and he read that article while on the phone. I did get some Lava Lock high temp silicone (black) and am thinking I’ll put it around the edges where the 2 barrel sections meet, and also where the air intake slides on. If you guys have any other tips lemme know, I’m all ears!

      I had my eye on the Bronco a month or so ago. They were on clearance at Walmart here for $100 and everytime I think about them I punch myself in the face for not picking up one or five of them. Looks like a great drum smoker. Even at $247 that is a great price.

        I heard rumors of them at $100, man... who knows, maybe again. I wondered if the discounted ones from Walmart were the older/original versions with the intake stacks that had to be replaced because they were manufactured upside down. Also read that they replace those quickly now if you happen to get one. Hopefully I don't have to test that theory.

      There’s a pro vs regular bronco version. Can’t remember the difference but worth researching.

      I drilled a probe port and added a fan controller to my PBC, so I have total control and I make ribs at 225 or chicken at 350 with the touch of an app button.

        Yep, the pro version is basically bigger. Bigger charcoal basket for uber long cooks if needed, and bigger circumference for a larger cooking grate. Targeted at "competition pitmaster" for whatever that is worth. Read a review from Girls Can Grill on the Pro that was nice, only review I found that talked about the drainage cup and cleaning. $700 for the Pro though, compared to $300 for the regular one (unless you find the blue light special I guess).

      I've started not monitoring the cooking temp of the PBC, but haven't done any truly long cooks. Did ribs yesterday, didn't put in a probe at all, just let it ride. Was a bit worried as it was raining pretty steadily here in NY but that thing just kept plugging along. If I want a blast of heat for chicken or anything, I can just crack the lid for a few min but temp doesn't mean much in that case but have stopped chasing a number.

      Obviously I'll still probe my meats but am enjoying giving up on worrying about the temp in that thing.

        Fantastic write up. Have fun with the new unit. If you don't like it, you can always go back to the folks' house and say "oh, snap, I gave you guys the old one. I meant to give you this." The only reason I don't have a PBC is because of my ignorance. Old dog, old tricks. I have always been so caught up in my temps that I know I would drive myself crazy at first with a PBC. The more advice I read about "letting it ride" the more neurotic I get about purchasing one.

        In fact, a buddy has a barrel cooker and he brought it to my house for a practice run on a Thanksgiving turkey. I read all of the instructions from AR and we went to town. It was not a PBC but I am his BBQ guru. We lit the coals, hung the bird and quickly lit that turkey on fire. Flames everywhere. I had a hose on hand and nothing was overhead. We couldn't put the turkey out for a bit because we were literally rolling on the ground laughing. One of the best belly laughs of all time. Telling the story to others just isn't the same as being there. When I read "let it ride" it brings me back to that early November day.
