I have had the PBC since the beginning of the year. I have cooked on it several times without a thermometer. I have a maverick 733 and was curious where people attach the grill temp leads when hanging the meat to cook.

I droop mine over the rebar and let 'er hang. As Jordan mentioned, not too close to any cold meats. Half way down a brisket on up to the lid, temps pretty much the same.
