I haven't posted in a long time, but since I'm in a waiting mode here, it seemed like a good idea.
The PBC has been mostly a rib machine the last few years. The last big cook I did on it was 4 (?) pork butts and 9 racks of StL ribs (not at the same time) for my my retirement party.
We're hosting a National Night Out party for our block here for the 6th year, and instead of the usual brats and sides, I said I would do pulled pork.
So, fired up the PBC with a full basket of KBB, with 40 started in the chimney. The side burner on my gasser is perfect for starting a chimney! The PBC was up to about 280 pretty quickly, so I installed the rack and dropped the two pork butts in about 9 AM this morning. These were 8 lbs each, boneless and tied up. Liberally coated with MMD.
The PBC held nicely at about 245F for about 8 hours, then started to drop pretty quickly. The PBs were in the stall at this point, about 152F internal.
I dumped the last of the bag of KBB into the chimney and got them started, and added them to the mostly depleted basket. The clods came up to low 160s, then the fire ran out again. Now, the embarrassing part... I was out of charcoal! The shed was empty! How does that happen ? I buy a dozen bags at a time when it's on holiday sales. I'm now wondering if someone helped themselves to my stash.
Anyway, the PBs are in the oven covered with foil to finish cooking.
