    I made my first PBC Chuckies on Saturday. Had the Butcher cut 2 large Chuck Roasts for a totaling 11#. Dry brined overnight. Hung in the PBC with a few oak chunks until they were about 160-170. Then wrapped with a little broth seasoned with BBBR. Took them to 210* and rested in a cooler for 2 hours before pulling. Now we're ready for Family coming next Saturday. They turned out great, both moist and smoky!

    Wow that looks amazing. Beautiful smoke ring peeking out every which way. Your family is going to be so impressed. I don't know how you'll keep from snacking on it between now and Saturday.

    How do you hang them? Do you tie them with string so they dont fall apart?

    Also, are you using bricks to hold the led down? When i built my UDS, i added four of these:

      I use two hooks per chuckie, stuck through the meaty parts away from the fat. They do sag during cooking but this gives you more surface area for smoke. Chuckies in the PBC are a bigger favorite here over brisket.

      I tied one string around each roast and then used 2 hooks per roast. The bricks are to hold the lid tight. I have a rope gasket too.

          That meat looks fantastic! I'm going to have to try this soon. Approximately how long did the cooking part take?

            About 6.5 hours in the PBC + 2 more hours of resting for 8.5 hours total.

          Skip How does the lid vent work on the PBC, are you getting better control with it now?

            The vent works well. It beats cracking the lid when doing chicken etc. The PBC ran around 300-325 for this entire beef cook--with the vent closed.

            Skip I went to Lowes to buy a step bit to install mine and gulped when I saw the price - $39. When I have time to drive into town to Harbor Freight they have one for $19, but until then mine remains in the plastic.

            I haven't done great either until now. I was always in a hurry and didn't rest as long before. Resting might be the secret? or the +5# chunks of beef?
