I figure you never have to cook everything all the way on a smoker or grill. You can cook something partially on a grill or smoker, and take it in to the oven for braising and finishing, already have the smoke flavor you want. Then no need for mods like this. I think I saw here somewhere that most of the smoke is taken in within 15-30 minutes?

While that is certainly true, a big part of the fun of cooking outdoors is ... cooking outdoors. Using the oven or kitchen stove is fine, but I get a lot of enjoyment out of cooking on the grill or in the smoker. Not to mention keeping the heat source outdoors also keeps the house cooler on a hot summer day.
