    PBC First Two Cooks

    Christened the new PBC last week with a couple of chickens. This week its baby back ribs! Thanks to all for the advice, tips, etc. on lighting and cooking (esp. fzxdoc's lighting method). Chickens were rubbed with PBC All Purpose, ribs have PBC Beef and Game.

              I always double hook. Happened to me also.

            Quick tip: When cooking 4 or fewer racks, cut them in half before hanging. They'll be much lighter than a full rack and much less likely to take a dive into the coals. Alternatively, get yourself a second set of hooks and double-serial hook full racks every time.

              Next time I'll probably cut them. The funny thing is, the one smaller rack fell off- I think it may have been a little more done than the two others.(due to being smaller, less meaty)
