First PBC cook

    First PBC cook

    Picked up the PBC this weekend and did my first cook: two small-ish chickens (following the PBC website recipe) and a couple pork chops that I covered in Meathead's Memphis Dust and hung until they read 145*. I decided to quick sear them on my gas grill, as they didn't have time to develop color in the PBC.

    I lit the charcoal with lighter fluid, which worked well.

    I haven't gotten into the pork chop yet; that will be tonight's dinner. But the chicken... wow! I can see why everyone keeps raving about the PBC's chicken-cooking prowess. (And its simplicity. The hardest part was probably disposing of the ashes.)

    A turkey was my first cook in my PBC. Those came out great. I invested in the ash pan that hooks under the charcoal basket. Helps huge amounts and you can scrape off the drippings that didn't burn with a simple plastic paint scraper

      Yeah, them dudes can whip up some chicken. I had chicken and a potato from a barrel last night.

      I have the ash pan... what I don't have is a good place to dump it. I have a little 6 gallon galvanized barrel that I used, but since its diameter is smaller than the coal basket's, I "missed" with a portion of the ash. Now it's all over my patio pavers. <shrug>

        maximweinstein I have only had one for the last 4 years. Prior to that all my stuff was out on or close to a 6x6 deck.

        My wife bought me the ash pan along with the PBC as a gift. I wish she hadn't spent the money on the ash pan. I consider it next to worthless since it has no sides. It's almost impossible for me to pull the coal basket out without the ash pan coming off.
