Got back from our lake house (rental) vacation yesterday, and since I have to do a fairly big cook for a party on Saturday it seemed like a good excuse to smoke up something for practice on my last day off. So since Fathers Day was mostly just getting back home I decided to get what I wanted - some beef ribs. I ran by The Fresh Market and picked up some prime English Cut short ribs. They had some really nice marbling.

I wanted to try a rub from the Sauced! competition team in Denver, NC that they’ve used with great success on briskets.


I lit the PBC with my usual 15/10/10 method, added a few small mesquite chunks, and got them on at 10am.

The PBC ran hotter than usual the whole time: 370F down to 330F over 2 hours. And at that point I took the lid off to check them, and I saw them wobbling on their little bones. Huh? Already? Got the Thermapen and checked and they were all 205-207F IT. Glad I checked when I did!


They are holding in my oven now at 170F. They are meant for dinner tonight for me and my kiddo, gonna be a long hold... I’ll let you know how they are. Wanted to add this cook tho since I couldn’t find one for English Cut shorties on the PBC. I’d take the 2 hour time with a grain of salt tho since my PBC was hotter than it normally is.
