Hey all, I'm wondering how you all are using your PBC with more than a couple of racks of ribs IF you're also following a Texas Crunch method. You can hang way more ribs than fit on top of the grate once you wrap them. Does it matter if they are stacked on top of each other after you wrap them? I've let them hang for the full smoke but have also had them fall off the hook! Suggestions?

I don't have a PBC, but a lot who do will double hook 'em. And as Jerod said, after several hours of smokin' you can put them in the oven.
I wouldn't stack them though. That will prevent even heating.

For years I roughly followed a 2-2-1 method but in the past 3 years I’ve abandoned that method and cook Memphis style dry ribs. If my kids want sauce I just do that at the end. I find my desired texture and pull is perfect and rarely ever mushy. My pbc is perfect for my rib style. But, as mentioned above, you can start on pbc and finish in oven.
