    Split Chuck Roast in half at 180 for both burnt ends and brisket-esque experience?

    Bought a 3lb Chuck Roast with the idea of trying out poor man's burnt ends. But then I also read that a Chuck Roast can make for a tasty version of brisket. Good or bad idea to try both? Figured I could run it up to 180, cut it in half and wrap one portion to throw into the faux cambro and cube the other half, throw in a pan with sauce and proceed on with the burnt ends?

    Anyone seeing potential issues?

    I suggest cooking it to probe tender usually about 205* faux cambro for an hour or better, treat it just like brisket. I've cubed, and sauced chuck roasts to make excellent burnt ends.
    I love a good brisket but chuck roast is my favorite. Got two in the fridge now ready for the weekend. They are also excellent for SVQ.

      Ok so how do you handle when you turn Chuck into burnt ends?

      I cut off what I want for burnt ends after the cook and put the rest in the cambro.
      Cube, sauce and put in a cast iron skillet back on the smoker till glazed.

    I smoke more chuckies than I do briskets because they're smaller which is good when I cook for two and because they're always tender and juicy--not as testy as briskets can be. That said, I love smoking briskets as well but smoke them more when family or friends come for dinner.

        ...Also I forgot to mention that your 3 lb chuckie may cook down to about 1.5 lbs, so you won't have many burnt ends if you split it in half. Just a thought.

          I'm going polar opo this weekend, QVQ medium rare chuck, eaten like steak...yum !!! No burnt meat for this guy
