Planning a beef rib cook. I'm confused by Noah's instructions. The website states: Cook times*
Cook Time: 1½ – 2½ Hrs | Min. Temp: 140º
His video shows these times as well. Everything I've read has ribs being cooked to 203 or higher (of course till probe tender) and this is a short cook even by PBC standards.
I believe you need to take them to 203. If you hold them after taking them off the smoker, don't let them drop below 140. Meathead says they'll take 5-10 hours.
