    That looks like a PBC in the back seat of my car!

    Broke down and bought one today. fzxdoc - HELP!! I'll read your stickies, but I know you have written extensively on this. Would appreciate any links you have to save searching. Jerod Broussard - I know you have mastered this thing. Any thing you would point me to is appreciated.

          A heads up for other Canadians. PBC now has a national distributor with great pricing (I assume its introductory pricing only). Canadian Tire is carrying them for $350 CDN. Given that the U.S. price is $300, this looks like a $100 savings AND no shipping. Finally.

          And everyone please feel free to give me advice. This is my summer project - better brisket and chicken.

            Luxe Barbecue in Winnipeg has been carrying the PBC for almost a year , they have been shipping them all over Canada .Canadian Tire never have them in stock .

          ​​Set the bottom vent to your altitude, approximately, then leave it alone.

              Hugh , I’m so happy for you! I always recommend going on the PBC site and following their directions. If for some reason those directions don’t work for you then there is a lot of good info available here.

              I always recommend that the first cook be chicken split in half following Noah’s video with the exception that you try to keep the PBC temp around 350 or more. I like putting rub both under the skin and on the skin as well.

                    Simply follow Kathryn's lighting instructions which is a sticky thread and you're good to go. It's so easy to use. You're going to love it.

                      For shorter cooks you don't need to fully load the basket; a single layer of unlit coals is sufficient. But that layer of unlit coals is critical for it to cook properly. Also, keep in mind that it's not a smoker, it's a cooker. It's not a PBS, it's a PBC. It runs hotter than what you'd shoot for in a smoker and it gets the job done.

                        Congrats!
                        Get the lighting of the fire down, don’t try to make it do something it wasn’t made to do (225*) don’t get all worried about high temps. It will leak some. Especially when new, put a couple of bricks on the lid. Have fun!
