    New PBC Chicken Wing Hack

    So I was thinking of a PBC improvement to chicken wings. How to hang them. Bent piece of wire. Gone to do a bunch today.

      I don't know brother, I think you may want to just go with the grate and just flip them every so often. Seems like alot of work.

            Good luck. Be careful they are in there tight. Don’t want to sacrifice a bunch of wings to the PBC gods.

                  Must have been a fun cook. Looks like you got more wings on than you would have had on the 18" PBC grate, even accounting for the one sacrificial one that hit the coals. Nice job!

                Wings turned out excellent. I cooked them using the ABCBBQ method. Dry brined over night, coated with flour, baking powder and salt. I cooked them until browning then coated in oil. I used the 1/4” rebar to get the temp in the 400* range. After applying the oil to them they really crisped up. I will admit the hooks did take a little effort but it is more technique then anything else. I can improve that. Also need to add something to help remove the cross bar. I did loose one wing to the barrel.
                Hooks are not more work but do take a little more dexterity. No pictures just too much going on.

                  Thinking outside the box makes me think using a chili roaster drum would work for wings!

                    I've known quite a few people that use a basket full of wings with their rotisserie. Works really well with the Joetisserie.

                    I just had a flashback to my favorite time of year... right after the heat breaks in TX and the Hatch chile harvest comes in, and my favorite grocery stores are running their pepper roasters outside. Smells amazing.

                    Couldn't you run a skewer through all of the meat and rest that from the hooks? Seen it done with breasts...

                    Someone in this community posted a pic of tying 2 drumsticks together with twine and then looping the twine over the rebar.
