      Nice - I'd like to try that! Don't see those whole in the butcher's case... suppose maybe they cut them up for Osso Buco.

          You see the different tubes of meat? They were all different. All had a very good beefy flavor. Some tubes were more tender than others.

          I used Meathead's beef rub, as I do with all my beef now. That stuff is fantastic.
          I dry brined with just salt overnight first.
