    First Turkey on the PBC

    Turned out supermoist. Brain dead easy to cook a on a PBC.
    16 pounds it took 2 hours 30 min at 330 degrees. Had to slide some folded tin foil to crack the lid a wee bit to get the temp up to 330. No rub this time as I just wanted to see what the turkey would be like without.
    Small chunk of oak. 28 degrees out when I started the charcoal 40 degrees at the end of the cook. No wind.

    I've had the PBC for six months. Almost bought the PBC jr. Glad I got the full size the larger as the real estate gets used.
    A thanks to everyone for all the tips and ideas. The Pit is an amazing resource.

    Thanks for posting. Getting ready to attempt my first turkey on Thanksgiving. I'll target those higher temps for my cook and see how it goes.

          That's a great looking turkey! Better not leave it all alone like that for long, the neighbors dogs will be all over that.

            Spinaker actually sorta kinda. I was razzed when I used a Detroit term of Ho-made but it really is a UDS a friend made for me. A 30 gallon with a few extras. Click image for larger version

              Nice! Since you didn't use a rub, did you brine it before, or did you go complely au natural?

              Good looking bird. I have done one every year since I got my PBC. I really love the turkey hangers they came out with. They made the process super simple.

ID:	595585 Looks great. Did you leave one rebar out? I do and that usually gets me to 330ish with no lid cracking.

                    Turkey hanger needs both rebars in place. Foil was all I needed to raise up the temp.

                    The hole at the top of the turkey hanger will also slide over a rebar. I put it across the fire pit. Buannaich

                  Surely the First PBC Post I find will for sure be someone who tested out the PBC on a Turkey 3 days before Turkey-day and had an utter fail and I can rest easy not placing the order.

                  BUT WAIT!!

                  There is no way they can ship me a 60 pound 30 Gallon Drum in time to make a test on Wednesday.
