I've both wrapped and let go all the way on my PBC. Both come out great. I typically don't wrap. Never had to add coals. Anywhere from 5 to 8 hours.

The last butt I cooked (3 weeks ago) was for a family Sunday lunch get-together. I wasn't able to attend, but I cooked a butt for 15 hours with no wrapping. It was as black as the ace of spades, but the bark and meat inside were to die for.
I'll never wrap anything again unless I'm pressed for time. I love the bark I get from not wrapping.

Heres the butt I cooked yesterday for the bbq class. 325 -350f (got up to 400f at the start) cooked in just over 4 hours. I wrapped it after about 3 hours to hurry it up. I dont have much time to cook low n slow at the classes when everyone is hungry. We ate a ton yesterday. The students were all gung ho to eat like crazy at the start but got bloated and sleepy as the day progressed.
