    in 4:45. And it's fantastic. It's juicy, smoky and pulled like buttah. I'm almost mad about it, it actually kind of offends my sensibilities.

    And, of course it ended up in the fire. Even double hooked on both sides, *plop*. Aside from a bit of ash it was fine, but I had to grab my welding gloves and yank the fire basket to save it. And then promptly stepped on a small bit of charcoal. In bare feet.

    Because Magic always has it's price.

    So then I hung some hot links from a hook and threw 'em in for 15 minutes. They promptly fell into the fire. The three that were not completely incinerated were... Fantastic. Magic always has it's price.

    Cooking log, so we can all make fun of the fact that I misspelled both "lighting" and "Hickory".

    Solid notes, I commend you on your handwritten details and commitment. However, it seems you would benefit from a fireboard. I don’t have one, so no disrespect! I’ve been eyeing one myself for a few weeks now. Formulating my plan to convince the wife I need one...😂

      The ability to put cook notes in a Fireboard's session is one of my favorite features. Good luck with your plan to convince the Boss that you need one.

    Wow! That fast a butt cook is amazing! I've pushed my offset high to finish butts faster, but never that fast.

    If I ever get a PBC I am probably gonna do butts on the grate, as I can see how that would fall off the hooks when it gets near to being done. And I will double hook all ribs for sure.

      I did my last butt on the grate. I’ve never had a butt hit the coals, but have had ribs. Not sure what you get out of hanging a butt versus the grate, unless you want to smoke multiple butts. I would definitely grate around 170 though - too much risk of the meat softening and pulling off the hooks.

    jfmorris I wouldn't push that high on purpose, that's just where the PBJr. wants to run right now. I need to play around with my lighting process and see if I can get it to run around 275 or so.

    There were a couple of fat pockets that would have rendered out a bit better lower and slower, and a few bits of bark that were super hard/burnt, but I'm nit-picking. I just cooked a 6.5 pound pork but in less than 5 hours. And it's *good*.

    And I have a blister on my foot, because Magic always has a price.

      mnavarre in my quest to make the ultimate Smash Burgers on Father's Day, I dumped a chimney that had small fragments of burning coals escape to the concrete in front of my grill, and I stepped on them. The coals burned to and stuck to my feet. A run through the yard and jumping into the pool helped, but I have a new rule: NO BAREFOOT GRILLING! At least with charcoal chimneys involved....

      look at it like this....the burns, cuts, etc are nothing compared to what the pig/cow/chicken/etc went through....

    mnavarre , at the risk of sounding like I'm telling you to close the barn door now that the horse is out, I like to move my PBs to the grate when they hit 170 or so. So far, knock "hickory, dickery", I've never had any meat fall into my PBC fire. Probability tells me, though, that the first time for this to happen is looming.

    Great PB cook time, though! Wow.

    Can't believe those hot links falling into the fire. Sounds like you need a modified sausage basket to hang from the rebars? I cut the wooden handle part off a couple of them. Use 'em all the time. Holds 6 sausages apiece. The PBC folks also sell a 5-sausage rack.

      Lots of threads where stuff is landing in the coals in these PBC threads. There must be a way to pretty easily put a expanded steel rack above the coals to catch the falling stuff. Couple L brackets screwed to the inside just above the coals and then the rack rests on the L brackets?

        Try putting butchers twine around the roast to make it even and then hook....helps with keeping it off the coals.

          I usually tie up my pork butts with kite string and when it gets a real nice bark on it which is usually around 170 deg F, I put it on the grate til it’s finished. Not one fell yet (knock on wood).

          On one of my pork butt cooks, I did 2 butts and only put 1 hook in each of them. I know, brain fart. One fell in the coals. That cook the air was filled with fire, smoke, and 4 thru 7 letter words. Did you know that pork butt burns quite nicely with large flames? However, I have never heard someone who was in need of stoking the fire yell, "Throw on another butt!" But it works. No butts about it. I did remove the charcoaled portion of the butt and finished both on the grate.
