    Peruvian Chicken For Dinner

    Made "Peruvian" style chicken for dinner tonight. 1/2’d 2 chickens. Wife says this is her favorite thing I smoke. Complete with the home made green sauce, plantains (store bought frozen section), & cilantro lime rice (homemade). It really is some kinda good!

      Isn’t it cumin/oregano/paprika seasoned served with a chimi sauce? Popular here in H-town.

      I cant get my cilantro lime rice to ever come out as good as it should. Any pointers?

        Here is what we do: sauté onion, garlic, carrots in EVOO. Use jasmine rice. However much water is needed to cook the rice, put the H2O and a large handful of cilantro in the blender. And cook the rice in the cilantro water. A little S&P, squeeze of lime, and add peas after it’s all cooked, they will cook in the hot rice.

      Used to hit up a Peruvian chicken place near the Washington-Dulles Airport. My favorite chicken ever. Will have to give the serious eats recipe a try, huge fan of J. Kenji Lopez-Alt. You use any wood in your PBC or just charcoal? Higher temp?

        I just went KBB only, no wood at all. Kept PBC in the 325-350 range.

        Eagerly awaiting this recipe. I used to hit up this fast/casual Peruvian place across the street from NBC studios when I was in La La Land for business several years ago, and absolutely loved it. Sadly, it appears the Burbank location of Choza Mama is no more.

            And here is the Peruvian chicken and green sauce recipe I have followed about 5 times now, love it:
            Juicy Peruvian roast chicken marinated in lime, garlic, and spices—served with a creamy, zesty green sauce for the perfect pairing!

              smn1285 , your Peruvian Chicken looks deelish!

              I've always wanted to use Dewesq55 's recipe here:

              1/2 bottle (12 ozs.) Goya brand Mojo Criollo marinade 8 oz. Dark or Amber Beer 1/4 cup soy sauce 2 Tbsp garlic powder 1 tsp ground black pepper 1/2 tsp ground cumin 1 packet Sazon con culantro y achiote 1 whole chicken Place all the ingredients except the chicken in a large bowl and mix well place chicken in a large Ziplock bag


              He also gives a link for the Aji Sauce.

                I stand corrected... its not cilantro lime rice. It’s "Peruvian green rice" per my wife. Sorry guys.

                  That sounds and looks fantastic! Definitely going to do this. It's currently sitting 3rd in line behind huli-huli chicken and the Mark Lambert herb smoked chicken.
