    Ok. Here is the cook.

    I am new to the PBC. Read the reviews. Believed the hype. Bought one. And started cooking. I posted my hunt for the thermometer to satisfy my data nut need but while I am writing I am cooking...

    My cook.

    1 whole chicken from Lowe's food in NC. Organic. Spilt and hung in the PBC. 2.5hrs for the cook to get to 165F.

    Image 1 is chicken cook. Awesome. Super happy. Agree that the PBC is a chicken cooking machine.

    But, the coals are still hot so I switch over. I remove the cover, put the grate on, then added my grill aluminum plates of goodness, and drop a NY strip that I bought for experimentation.

    The cook was frustrating. I only added salt and pepper. Put the steak on the aluminum plates. And watched the time. 10 min a side. Temp to Medium Rare. Not a pretty steak...

    BUT in an early post I stated "the angels' hopefully will sign"

    well. IT IS NOT FAIR. HOW CAN A STEAK TASTE THIS GOOD. I HAVE NEVER COOKED A STEAK THIS WELL. I MAY CRY.

    I really do not care about any of the comments about the steak I cooked. I am happy. I accomplished something with the PBC I never expected. It does not make sense and that is ok. I write this for the doubters. For the people who do not believe in the PBC.

    Best steak I have cooked in 42 years.

    Onto the next challenge.

      I have no doubt that the PBC can make an awesome steak. But so can most any grill when the person running the grill is doing it correctly. So I say to you, glad you like your PBC, but you made the best steak of your life.

          I came into this thread thinking my wife had written it, but I am pleasantly surprised by some great looking food. The bird looks great, and that steak looks amazing.

            That's some fine looking food there! I'm glad this worked out for you. Not to hi-jack the thread, but I recently had to accept that I was wrong about wanting my PBC in the first place. I really wanted to love it, and I had gotten good at controlling temperatures and whatnot. But in the end, I'm just not a fan of the PBC flavor profile. There are too many other options in my lineup of cookers that I honestly prefer. So I sold it on Craigslist this week to a person who can surely give it the appreciation it deserves.
