Man Fire Food

I was watching an episode of Man Fire Food on the Cooking Channel last night and they visited a BBQ place in Hawaii that used cookers similar to the PBC. One thing they did with ribs that looked interesting was they hooked the slab in the middle of the rack and folded it in half. Anyone ever try that?

havent done that, but I did buy an extra set of hooks and i double hook ribs to take some of the pressure off the slab as it cooks.

I have not, but that sounds interesting. I guess you could also just lay a slab over top of one of the rebars and it would fold over. Probably a lower likelihood of tearing off the hook which has happened to me all 3 times I've cooked ribs in my PBC.

If you hook the ribs too low it puts pressure on the hook in the meat when you're manipulating the hook on the rebar.

I would be scared that it would break in half during the cook.

That place is amazing. Chicken in a Barrel. I have one of their rubs, very good stuff. My buddy goes to Hawaii, every year and he always goes there. Supposed to be pretty dang good!

It would seem this method would negate the radiative heating effect from vertical hanging.
