              Great call! I do this when I am making beef ribs. It works perfect. I have never tried it on chicken, though. Great idea.

                I was at the grocery store yesterday and they had chicken legs on sale for $.99 per pound and 8 per package. I dry-brined them and popped them into the freezer. I told my wife that when I cook them, I will be drilling them first. I thought it was a nice coincidence that each package had 8 legs and I have 8 hooks for my PBC. It seemed like destiny.

                  This looks very clever. But I'm not sure why it is better than just hooking the meat. What am I missing?

                    The idea was essentially a lark, but I thought there would possibly be more subcutaneous fat on the thigh that could liquefy and drip into the coals and create flavor in the smoke.

                    I have never had chicken fall off. Other cuts, not chicken, but I don't do chix on PBC often. Is it a prob for other folks?

                    I wouldn’t be concerned about it falling off either. To me it just looks cool plus the bonus of using a power tool for a cook. That is why I’ll do it.

                  It does accomplish the hang without damaging the skin, so there is that.
