Howdy folks. I'll get to the point... I hooked a turkey up and hung in in the PBC for Thanksgiving. I watched Noah's video on how he did his, and took care to be sure (I thought) to get the hooks in deep thru what I thought was a dense bony area. So, after about 2.5 hours, the PBC was smoking like crazy, and I rushed out to find that the bird was hanging on by 2 hooks out of the 4 I hung it with. I saved it. It turns out it was done, so I plopped it in a pan and tented foil over it until all the other chow was cooked. It tasted great!
Fast forward to Christmas... Turkey again, re-watched Noah's video, was even MORE careful to dig in deep with those hooks and after about 2.5 hours, it was hanging by only 1 hook. Same result in the end, saved it, and it was delicious. No leftovers.
What am I doing wrong? Should I yank it off the bars after about 1.5 or 2 hours and throw it in the oven? I saw Noah's video and he cooked his on the hooks for the duration.
Opinions please.
