    Broke in the new PBC this weekend...

    Chicken was the first cook Saturday night...probably the best chicken I have done...

    Sunday went with a pork butt..started the coals with an outside temp of -1 degrees...came out amazing...

        Winner Winner Chicken Dinner...

        I had given up on cooking chicken....never could get it to come out right on the Weber...PBC is definitely a chicken cooking machine...

          Try some jerk chicken in that dude, nice added flavor profile.

          For me butts are sooo much less work than briskets in the PBC.

              Looks great!

              Did you hang the butt the entire cook, or take it off the hooks and wrap it and put on the grate, like they discuss in the recipe on the PBC website?

                I hung it fat side up until it reached 160...then I put it on the grate fat side down...

                I have only wrapped one or two butts...I like the way the bark comes out unwrapped...

                I agree - I prefer not to wrap butts either. I was just reading/watching the butt instructions on the PBC website, and they wrapped it - probably to ensure that it finished in the described amount of time (and one load of charcoal).

                The cook took a little over 10 hours...I did add a small weber chimney full of lit coals at about the 8 hour mark since the temps had dropped to around 220...I think that was pretty good considering the outside air temps...
