    Multi-Grate Mod

    I wanted a way to get a drip pan under a ham and ended up with a multi-tier grate system for the PBC. This has proven very handy for smoking more wings, as well as the original intent of being able to catch drippings.
    I just got some 1" Coupling Nuts from Ace Hardware to use as the rack rests. Drilled some holes and voila!

    edit: I forgot to tell you that I also sawed about 1/4 inch off the original rack rests so that I could get the lower grate into position. Each rack now requires a slight tilt to move past the posts, but I've done this with full racks of wings and the tilt is not enough to cause any of them to even move, much less slide off!

      Very ingenious, expands th' usability/versatility greatly!
      Mostly, I just balin' wire a drip pan beneath th' cookin' grate, directly under th' protein(s), but yer solution is more permanent, useful, an' versatile! Considerably more elegant, as well...

              Thanks fellas. The PBC is already a fantastic cooker but just a few little tweaks here and there make it even better! Multi-tier cook racks is a good one, but after using my son's unmoved PBC on Thursday for the turkey while I smoked the ham, I realized that the one that's made the most difference is my Redneck Airflow/Heat Control mod. I'll have to put a quick post up about that.

                I am curious how the pit barrel operates when you place a pan under the turkey not allowing the fat and juice drippings over the coals. Does it still maintain the temperature? This is something I have been thinking about

                  So you probably lose some of the extra flavor that comes from vaporizing fat and juices. 'Probably' because I can't detect any measurable flavor difference with or without the pan. As for temp control, a big benefit to catching the drippings is temp. control. There seems to be far less variation in temps throughout the cook when I eliminated the uncontrolled fat melt.
