    To hang or not to hang...That is the question?

    I have watched Meatheads video and read his information on Turkey prep/cook. I am curious as to the best method of cooking a turkey in my PBC. In Meatheads video he spatchcocks the turkey and lays it flat on the grill. In the PBC forums for cooking Turkey it seems that most who spatchcock hang the turkey. Which method will yield the best tasting results? Thanks in advance!

    Was Meathead using something other then a PBC? If he was it was probably spatchcocked to get some clearance with the lid.
    I've done turkey both ways (spatchcocked and whole) in my PBC and always hung. Comes out grate either way.

    He was using a different smoker and was also catching the drippings for a gravy.

      Only difference with the PBC-cooked turkey is that the drippings are supposed to hit the charcoal, and smoke back up onto the turkey, enhancing its flavor profile. If you catch them, they don't "smoke" the turkey.

        You can do both if you take some of the trimmings from the bird (e.g. neck, tail fat, extra skin, wing tips) and place them over the fire. This creates some smoke flavor.

      I hang all mine just like a chicken putting the hooks just underneath the wings.

          Hang 'em high. I hook under the armpits into the back (spatchcocked bird). Thighs and legs get done nicely and the breast is so moist. Makes for a great turkey cook. Have fun with it!

            I cut mine totally in half. Then I hang them like that. I treat the dirty bird just like I do a chicken. It works well.

                  What Jerod said. I only smoke spatchcocked turkeys. the hook goes under the armpits and, if the spatchcock is flat enough, hooks into the back rib area.

                    Yup, exactly, phoccer . If the turkey had been larger, I would have placed the single rebar diagonally.
