          Great looking skin on those birds! Add little baking soda to the mix to help dry out that skin even more. Leave it uncovered in the fridge the night before, on an elevated rack.

              Spinaker, is there a preference for baking soda vs baking powder to crisp the skin? I actually mixed a little powder in the APR to coat the skin as noted, and I think it helped. Just curious if you had a preference for one over the other.

                My apologies. I use baking powder was well. I always get them mixed up.
