I am having a get together today and have had a brisket on my PBC since 2 this morning. Things are going wonderfully and that thing just looks like it is going to be incredible. After I take out the brisket to place in a faux cambro I plan on adding in some ribs and a slab of pork belly. My question is whether I need to make a new set of coals for the second round of cooking or will the ones that I have been using for almost 10 hours now be able to sustain the cooking temperature? Any advice anyone could give is greatly appreciated.
