    Just started a bacon cure

    2 Tbl Kosher Salt
    2 Tbl Pepper
    1/4 cup brown sugar
    3/4 cup B grade Maple Syrup
    1&1/8cup Buffalo Trace
    1 tsp Prague Powder #1
    4 roasted, sliced Jalapeno Peppers
    4 # pork Belly

          PBC'd the bacon for 2 hrs, waited a day and sliced it up, made home frys with sauted onions and the bacon bits

            I have been making all of our bacon for a year or so. This was my "never go back" experience. When we run out of bacon it is a major crisis around our house.
