    Birthday brisket

    Parents are in town and we are celebrating my mom's and daughters birthday. I've been telling my parents I'd make a brisket so today was the day. I decided to use the PBC because, well, I love it. Today I went a step further in my trust of the PBC and while I did connect my Maverick to know what the temp was, I didn't really monitor it, I just let it work it's magic. I use Kingsford Professional in mine so it seems to run hotter than what I hear other PBCs run. Mine ran between 350 and 380. A 10lb brisket was done in about 5 hours. I took it off at the 3 1/2 hour mark to wrap with an IT around 190. I separated off the point, cubed it, and wrapped the cubes in foil with a slathering of Sweet Baby Rays covering them. Put everything wrapped back on and let it go another 90 minutes. Flat is still in the faux cambro, burnt ends are gone. I now know my setup procedure for my PBC and have full confidence that I can fire it up, load it up, and go about my business. Has to be one of the best purchases I've made.

            Another fine report from another happy PBC user. Good to hear.

            Sounds like you've got that PBC working like a charm, phoccer . Do you routinely run your PBC at 350 to 380°F?

                fzxdoc That's where mine seems to want to run. I haven't figured out if it runs that hot because of the KP, a leaky lid, or the vent too far open or some combination of the three. For now, it's working so I'm just letting it go as the results are good. At some point I plan to run it with B&B Briquets to see what temps it runs at. I haven't noticed a ton of smoke coming from under the lid so I don't suspect a leaky lid having a huge impact. I expect to see a little lid leakage.

                  fzxdoc I went back and looked at my PBC cooks since I received it in March(Thankfully my OCD about recording cooks is paying off!). I thought it was typically running at those higher temps but I was getting running temps confused with starting temps. My PBC will run in that 350ish range for about an hour at the start then drops off and settles in the 275 to 300 range which is perfect for what I want. That last brisket did run hot but I think I see why. My lighting instructions call for me to lit 30 Kingsford Pro and let them burn for 12 minutes before dumping them on. I think with this cook I had 40 in the chimney and wasn't paying complete attention to my light times and it may have run long. I also only cooked one 10lb brisket so my standard lighting procedure would have been better. So more fuel and starting hotter probably led to this cook running hotter than what I would normally run.

                    phoccer , that's interesting, and falls more in line with what I see in my PBC with Kingsford Professional. So maybe our two PBCs are more alike than we thought.

                    I also keep a record of each cook, which has helped greatly in my quest for reproducibility from one cook to the next. I bet you're seeing the same thing as you analyze your own results. Keeping a cooking log is a good thing.
