Fired up the PBC for the first time in a while. Once summer sets in in Houston I try not to go outside if I can avoid it. I often feel as if the sun has a personal vendetta against me.
But I decided it was time to do a few things for the first time. 1) I'm cooking beef ribs. I've only ever smoked pork ribs so I got a rack of back ribs, put some Cash Cow Rub on them and hung them. 2) I wore my Pit Member Shirt while cooking. It's been hanging in the closet waiting for a special moment. What's more special than beef in Texas and cooking for the family? Doing it in your Pit Member shirt.
I'll post pics later of the finished product. But here's the ribs and shirt at the start of the cook.

Being from West Texas Obi-Dan I completely understand!! I've taken off the last couple months!(oddly it's beginning to look like Aug is going to be the coolest of the 3 months?) Beginning to get the bug to cook some stuff again! I'll let yuo be my inspiration!! Good looking shirt!! I would have gotten one if I thought it was in my size, need to cut back on the Beef!! lol
I'll take the fact there were no leftovers as a good sign. I maybe could have left them on a bit longer as they weren't as tender as I'd hoped. But they were juicy, flavorful, and delicious. This will be in the rotation.
