    First Beef Short Ribs on the PBC

    Strangely, I have never done beef short ribs before. Decided to do them today at the trailer in the PBC.

    Bought two, four-bone racks, seasoned with Pit Barrel Beef & Game Rub and into the PBC.

    The PBC was running about 280-290, so the ribs shrank along their length, but DOUBLED in thickness. Probe test was just as described - like butter. When they were done, I finished them with a little Cattleboyz Original BBQ sauce.

    They were enjoyed by all.

                      Neither. Did them with one hook for each rack. I took the picture after I cut them apart.

                            You really got me hooked. Just went out and bought some Angus short ribs. I trimmed 'em and they are being dry brined. Looks like I'll be busy tomorrow.

                            Looks really good. I keep an eye out for beef short ribs at my grocery store, but haven't seen any yet.
