    New horse in the stable

    My new PBC arrived and I put her right to work with a test slab of baby backs.

    Not sure what what sort of wizardry occurs inside that thing...but these things were done in 3.5 hours. I remember early on when I was gaining an interest in smoking (and with no dang idea what I was doing) that 3.5 hours of cook time tended to produce shoe-leather tough ribs. Had I left these things in for 5 more minutes I'm afraid they would have fallen into the fire.

                              Congrats on the PBC and first cook! FWIW, if I'm cooking 4 (or fewer) racks in mine, I'll cut them in half to reduce the chances (by about half ) of anything dropping into the coals.
