    Texas beef ribs on PBC

    I'm going to try cooking Texas style beef short ribs on the PBC. I'm thinking I need to place on the rack instead of hanging? Any insight?

    I did a 7 bone rack a few weeks ago, cut em in half, 3 bone & 4 bones - hung them ... MAGIC!

    When I did short ribs, I did 'em on the grate. Came out absolutely wonderfully. The red you see poking out from the crust was the smoke ring.

        I did two very long short ribs a few weeks ago, and just did them on the grate, bone side down. They turned out great. They were already separated though.
