    Better later than never

    For Father's Day, I gave my dad a choice of taking him out for dinner, or smoke him some ribs and bring sides. Well, he picked the correct choice or I wouldn't be here with this post. So I picked up a nice couple of baby back ribs from my local Publix, applied Memphis Dust to them, and set them in my PBC. We had rain early in the afternoon so I had started later than I wanted to on the cook. Once I had the PBC at 325, I put the ribs on, and then babysat them where when temps dropped to 250, I'd cracked the lid to crank up the temp to 325 and then wait until the next drop. Mostly this was done because of all the humidity left in the area after the rain and waiting for the next set of storms. However, with the nursing the temp up and down between 325 and 250, I pronounced the ribs done with probe checks at around 190 after 2.5 hours. I pulled the ribs, slathered a single brush of Heads Country sauce, then put them in a pre-broiled oven for 5 minutes. All it all, my dad way happy with them, and that made me happy.

    I'm adding a post comment in that if it wasn't for the rain in coming back and forth through the day, I wouldn't have sat on it monitoring temps. I was making sure that I wasn't going to be late delivering on the goods because of previous experience excess humidity, especially rain, will fluctuate temps on a PBC. At least that's been my case in Georgia. The takeaway on this is that pork is very forgiving in these types of situations so you can probably not take it to the extreme like I did, but I wanted to ensure my dad had a good set of ribs on his day!
