    Normally, reverse sear works on meats 11/2 in. thick or greater. Under 11/2 in. Just cook it directly.

        Torching would be perfect, as long as you don't burn the house down. The steak looks so yummy though, even without Mr. Maillard dropping by for a visit.

            I followed the instructions on the PBC site for flank steak and they always turn out great. Makes a tough piece of meat tender and juicy. If you have grill grates on a gas griller, getting the marks is not a problem.

                Ok, so now I have to try steak on the PBC. Was looking at their steak video last night and now this thread. I'm very happy with steak results on my Weber Kettle + SnS setup but hey, science!

                  Probably won't but I figure it will a split between my current setup, which gives a great sear, and just a slow cook the entire way to my desired temp. I'll be cooking high and fast on steak is what I'm figuring so it will be somewhere in between. That's my guess.
