    Mentioned in the Off-Topic thread it was time to get back at it after a month off from BBQ. Fired up the PBC today to do 3 racks of Stl Louis ribs. Looks like I have the PBC setup perfectly for my environment as my temps have been bobbing along in the 270ish range for the entire cook. 3 hours in and just did a check. Meat is starting to pull a little bit away from the ribs so I figure another 30 to 45 minutes.

    Nice smoke fog going. Smells are awesome.

            I love opening the PBC. It magical. All that smoke, then the meat sloooowly comes into view.....all the while the smokey aroma is tantalizing your senses. Good stuff brother.

            One sauced, two without sauce. Pretty happy with the results. I may give them another 30 minutes next time. Cook went well with temps right around 265 the entire time. Really enjoying the PBC.
