I have two party events coming up at the end of the month, both driven by a third event - my retirement on June 30 th !
These events are a week apart on sequential Fridays, and both have to feature pulled pork and ribs.
I did my first run on two boneless butts yesterday, about 15 lbs between the two. I did them on the rack, as I have not been very successful hanging tied-up boneless butts. With some family here, we ate about half of one as pulled pork, and the rest got pulled and vacuum packed for the freezer. That run took about 9 hours for both to get to 203F, PBC ran about 250F all day, and still had some energy left when I pulled them off.
I have 6 more bone-in butts each about 10 lbs, and 2 more boneless. I need to cook two for the event on June 30, and the other 6 for July 7th. In between PB cooks, I also have to do some ribs last minute, maybe 6 racks for the first event, and maybe 9 racks for the second one. I can't see how I can do more than two of any from of PB at one time, either hanging or on the rack.
Maybe Jerod has a secret loading technique ?
I guess I could do two on the kettle w/SnS and a drip pan. Maybe only 1 at a time?
