Well I did my first bbq competition. The West Coast BBQ Classic (KCBS) at the Queen Mary in Long Beach, CA. We were required to sell to the public. That was a bit intimidating with this being my first comp. We ended up cooking on 5 pbc's. Cooked 50 racks of ribs and some butts for pulled pork sliders and pulled pork nachos. We served just over 500 people. Lots of work but lots of fun. Love the Pit Barrel Cooker Co.
......also, every time I opened one of the barrels to take out the ribs, a bunch of people would see this and just line up at our tent.

Thank you so much fzxdoc. I've been waiting for you to chime in here. I knew you would lol. Looking to do a cook by Monday using your lighting method. Always looking to improve. Does it change anything if I use weber lighting cubes?
I no longer use the small weber chimney. Takes a long time. Current method is large weber chimney with 40 briquettes. 1 weber lighting cube. 12 minutes. Dump fairly even and close lid with rebars in for 5 minutes. Hang food then

Sacred Smoke BBQ , to answer your question, I switched to Weber lighting cubes a long time ago. I find no difference, except that for me the cubes are more convenient and newspaper ash isn't floating around everywhere.
I gave up on that Weber compact chimney too, because I got too impatient with the wait for the topmost coals to start to get some ash on them. Like you, I went back to the full sized chimney. Then I spotted the Char-Broil Half Time chimney which is a wider compact chimney. You can see my comparisons of lighting times for the Weber Compact vs. the Char Broil Half Time on this topic:
Note that some folks, maybe Huskee is one of them?, didn't like the Char Broil Half Time. Not sure why. I'm a happy user, though, especially for lighting the PBC.
fzxdocHuskee ....I light 40 briquettes in full size weber chimney with weber lighter cube. 12 minutes later I dump them in my compact weber chimney and pour in the pbc right away. It's easy and doesn't take up any time for the chimney transfer. I have both so might as well use 'em if no trouble
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

You're correct! I find it too wide, and I have the same complaints about it that you have with the compact Weber...for me it seems to take too long for the amount of coals I'm lighting. I prefer the more narrow chimneys myself. It is great for dumping in the PBC though, which is what I still use it for. I wonder how PBC's chimney compares, if it's the same size or narrower.....but I don't want to buy a 3rd chimney so I'm content wondering.
I have 3.....had 4 at one time. Need them when lighting up to 5 pbc's. Otherwise the last barrel will be an hour behind the 1st. I tried adding more briquettes to full size and sharing between pbc's but uneven temps. 1 hot, 1 much lower temp
