So, we're planning our biggest PBC cook yet for this coming Saturday and will be transporting it on about a 2 hour trip to a family gathering. It will consist of 4 slabs of center cut pork ribs, 3 chickens split in half, baked beans & grilled sweet potatoes. Looking for feedback on my plan and acheiving respectable results......Ribs on PBC 1st for 2 hours, then transferred to rib racks on gas grill , 2 zone set up 225-250, hang split chickens on PBC with hinged grate and beans till 160f in breast (hoping ribs will be done by then), sweet potatoes on last while wrapping everything else for transport....looking for a total time of around 4hrs till we hit the road and rocking' down the highway.....doable? suggestions? blessings? Thanks in advance!!!

Three pieces of feedback from me.
1. Would it be possible to load up the PBC and accessories and head to your family gathering earlier? That way you could show it off in action and not stress so much if things take longer. Plus nothing beats chicken right off the PBC with the juices spurting everywhere
2. I just did ribs followed by chicken yesterday, and I'm thinking the ribs will take longer than two hours plus one on the gasser. I would plan on up to 4 hours and the gasser can be used to carmelize the sauce. An hour at 225 on a gas grill with sauce won't overcook them, and some of my ribs were a little tough (oh the horror!) yesterday with 3.5 hour PBC and 1 hour oven at 250. If that is workable, I'd throw the sweet potatoes on during the rib cook on the hinged grate and hold them for longer.
3. I highly doubt there would be room to fit beans on the grill below the hanging chicken. You will need both rebar for 3 chickens (6 chicken halves, right?). If the beans will fit on the hinged grate with the sweet potatoes, I'd put them on with the ribs as well.
