    8 Racks of Spares - Longer Cook Time?

    On Sunday, I'm planning on doing 8 racks of spare ribs in the PBC for an evening potluck at my church. With just a couple of racks, I'd expect the cook time to be around 3 hours. I saw 5 racks took just 3 hours in the sticky "Meat and Time" post - looks like no extra time at all. Will the same be true with a full 8 racks, due to the thinness of the individual racks, or should I expect a significantly longer cook?

    Multiple times I have done 8 racks and the only thing I have run into is that you may have to crack the lid to keep the temp up due to the moisture of the meat but the cooking time didn't really change, my last 8 rack took 3.25 hours, pulled at 2.5 and glazed, have fun people at the church are lucky

      Thanks! Good point - with the thinner thickness, more moisture is going to get in the inside air, but cracking the lid would solve it. Excellent! Thanks again!

      If you plan to do this often you might want to add a vent to the lid

    Cook went well! Cracked the lid frequently, ribs came amazing as usual! Thanks Brewmaster! I don't know if I'll do this many ribs often, but if it turns out I will, I'll consider the vent. Thanks again!
