to fiddle with a more capable cooker)

You're going to hate this answer but ... until they're done (sorry). You'll find some good intel on the subject here: https://pitmaster.amazingribs.com/fo...ts-if-possible
FWIW, I generally allow a minimum of 4 - 5 hours total just to be sure.

3 to 3 1/5 hours on the PBC for baby backs. But you should also check out the thread Mbmorgan mentioned. There is a lot of good info there.

Homeplace cooking/cookers
Past: Weber Performer, Sunbeam cheap CHEAP gasser, CharGriller offset
Current at home: 1999 Weber Silver C, Weber 22" Jumbo Joe Premium, Pit Barrel Cooker, Ikea wired thermometers (2), iGrill mini,
"Deployed" cookers: 2001 Weber Silver C (father in law), mid 90's Weber Genesis Redhead, fully restored (Parents house).
My last babybacks, three full racks, with known good Kingsford Blue Bag, was 4.5 hours and they could have been pulled sooner.
Yes, I have had my adventures with less than optimal KBB (read big box home improvement store, located by the front door during their huge "2 fer" sale). Ensure you buy it dry and keep it dry. I am so anal now it stays in a closet in my house in a plastic container.
