Easy PBC Rack of Lamb

Feeling lazy I decided to cook two racks of lamb without the hassle and distraction of monitoring ambient and meat temps so instead just fired up the PBC and let it do it's thing. I learned from the PBC video that a rack should take about an hour and thought good enough - so be it. Hung two racks and checked their temps at 30 minutes - 125 degrees. Checked again at 50 minutes and had a perfect 140 degrees. I have no idea what temp the PBC was running at and better yet didn't need to worry about it. Doesn't get much easier.
