    Just got a couple of chuck roast the other day and was wondering how long can you leave the in the fridge salted till you cook them, I plan to SV them then sear.

    i do about 2-3 days (depending on schedule). in a thread a member did 5 days and said they turned out great

      I have done up to 7. no funky smell and they tasted great

    With beef I don't worry too much. I leave mine in the fridge for a week in some cases, with no issues.

    So I SV'd the chuckie for 24 hours at 136.4 and put in fridge for 2 days, I have it in the PBc and wondering what internal temp I should be looking for

      Probe tender. Somewhere between 195 and 205, I'd think. Although the SV could lower that a little.
