      I tested the fan out before I turned things loose. Worked great with the flap closing like it should.

      Auber set for 250, barrel peaked at 263-270.

      Chuck roast in the back. Pastrami other two pieces. It really slimmed down on one end, hence the two pieces. Also, if anyone is thinking of any not so last minute Christmas gifts for me.

      Jerod this looks like a PBC , I thought they were pretty much set forget.... so I'd ask if you were having trouble holding temp or was there another reason for your modifications

        A FULL load of meat (4 briskets, 3 butts) will cause the temps to dive when the stall hits. Also, very humid overnight cooks will cause temps to drop too.
