    First time smoking beef short ribs ever.

    I've never done smoked beef short ribs before, so I got some really short ones for a test before buying the big dinosaur bone. I'm good based on how these turned out. Very tender, and check out the smoke ring in the last picture. Bring on the dino bones!

    For notes: I dry brined them for 20 hours with Kosmos Texas Beef rub. They were on my PBC with temp starting out at 330 and pulled them 3.5 hours later with meat temp at 200 to 210 when barrel temp was 280.

    Forgot to add that in addition to the Kingsford charcoal that I also added a large chunk of pecan wood and two small pieces of mesquite wood.

              I have some short ribs in the freezer, so after seeing your pics it is time to defrost them. Ther isn't much meat on plate ribs, but I have done those with good success.

                    Dino ribs for sure! Our local Safeway always has full plates in the meat locker--must ask the butcher for them.

                        Those look outstanding! Finding beef ribs in my area is tough. So far I've only found back ribs and we loved them. I'll have to shop further away for shorties.
