    PBC observation

    Second cook on my PBC was a rack of ribs. I hooked them just like the PBC site recommends and found my rack of ribs dragging in the fire box. I cut the rack in half and cooked it that way - it was fabulous and I was really impressed with the bark. Click image for larger version

    That said, it kind of throws a wrench into the claim of being able to cook 8 racks of ribs at the same time ...

    I don't have a PBC so cannot offer advice but those ribs look awesome! Love the bark!/

      I hook lower on the rack like 4-5 bones down and just let the top portion rest on the hook.

        I do the same thing on hooking lower on the rack of ribs now. I had the same thing happen on my very first cook several years back. Fortunately I was a "looker" because it was a new toy so I found them before they were burnt to a crisp.

      X2 I do the same. Works great. If I'm only doing a rack or 2 I have the hinged grill grate and cut 3 or 4 bones off the bottom and throw them on the rack.

        After I trim my ribs, I find that even if the tip is on top of the fire, the meat shrinks up on the bones and "pulls" the rack away from the fire sufficiently. That said, any of those alternative methods work.

          IMO, the last few ribs are better used for meat to add to greens, cabbage, beans, etc, so I trim that off at the start and smoke it separately. That leaves plenty of dangle room for me.

            Thanks, makes sense. Now that I have a PBC, I wish I had picked one up a long time ago. My WSM is officially retired and if anyone in San Antonio wants it, I'll let it go cheap.
